Draco expected to make better progress with someone listening to him “teach” while he worked, so he set Harry on a simple repetitive task they both thought he could easily handle without intervention.
Draco was the sort of Professor who liked to explain what he was doing, and Harry was happy to find that he enjoyed the impromptu potions “lessons.” Perhaps it was because he knew he would not be graded, which allowed him to relax; perhaps it was because Draco was explaining rather than Snape, which helped him to make connections. (Not that Snape had been partial to explanations.)

Draco neither needed nor expected Harry to respond, so once Harry got into the rhythm of sorting petals by color (three pink shades, two purple shades), he could easily pay attention not only to Draco’s words, but also his movements, his tone of voice, and how pretty he looked in the bright light needed for their tasks.
All in all, the whole setup gave Harry the pleasant opportunity to just.. marinate in Malfoy all evening.
And Draco seemed to enjoy having him there. Clearly, this relationship was well in progress. Harry was pretty sure that was exactly what he wanted.
